Glass Onion Cafe opened its doors in 1961 on the edge of the Nevada high desert, long before Wellington became a destination. What started as a simple coffee counter has grown into something the community still gathers around — a place where the roast is always fresh, the conversation runs long, and the same counter that serves your morning pour-over transforms into a cocktail bar after dark.
We source single-origin beans from farms that practice sustainable agriculture, roast them locally in small batches, and pull every shot by hand. Our cocktail program draws on classic technique and local ingredients — nothing pretentious, nothing rushed. Just good coffee, well-made drinks, and the kind of warmth that comes from sixty years of showing up every day.
